Happy National Cashew Day! I don't think I've ever cooked or baked with cashews, but if nutshealth.com¹ is to be believed (and why wouldn't you trust nutshealth.com, anyway), they are less expensive than some other types of nuts. Last year for Christmas I made spiced pecans, which I'm sure you could also do with cashews, if you so desired. This year I'm going to try to marry the spices from that recipe with the possibly-healthier (or at least more-potentially-salmonellaey) binding agent from this one, using egg white instead of oil. But it will still be with pecans (or maybe almonds!) because I want to use Top Shelf nuts for my holiday treats. None of these cheap cashews for my friends and family.
Holiday nut experimentation! So... my life is pretty exciting.
