Salmon cakes

Ingredients
Cakes
- 1 egg, beaten
- 1 sachet (6 oz.) salmon
- 1 tbsp olive oil
- 2 green onions, finely chopped
- At least 1 cup bread crumbs
- dill, to taste
Sauce
- mayonnaise, to taste
- lemon juice, to taste
- worcestershire sauce, to taste
- dill, to taste
Directions
Preheat oven to 375°F. In a medium bowl, beat egg, then add salmon. Break salmon up with a fork if it clumps together. Add olive oil, onions and ⅔ cup bread crumbs. Mix together until uniform. Put a layer of breadcrumbs in a small bowl. Form the salmon mixture into 8 balls, roll in the breadcrumbs, then flatten slightly before placing them in a glass baking dish. Bake 10 minutes (turning once) or until golden brown. While cakes are baking, prepare the sauce to taste.posted by srah | Saturday, 11 July 2009 | 10:13 AM
