Surimi and Avocado Salad

adapted from Recipezaar

Ingredients

  • 1 avocado
  • 8 ounces surimi (Crab flavor)
  • 2 tablespoons chopped cilantro
  • ¼ onion, sliced
  • juice of ½ lime
  • salt & freshly ground black pepper

Directions

Shred surimi and place in bowl. Score avocado into 1 and 1 inch sections and spoon into bowl. Squeeze 1/2 lime over the mixute. Add onion slivers. Add cilantro. Salt and pepper to taste. Stir well and serve.
