Spinach Soup

Ingredients

  • 2 10-oz packages frozen chopped spinach
  • 1 small onion, diced
  • ½ cup water
  • 3½ cups chicken stock OR 3½ cups water + 4 bouillion cubes
  • 3 tbsp butter
  • 2 tbsp flour
  • 1/8 tsp pepper
  • 1 cup half-and-half
  • 1/8 tsp nutmeg

Directions

In large saucepan, cook spinach, onion and water until thawed and tender. Pour mixture into blender, add one cup of chicken stock for ease in processing. Process on medium speed until pureed. In same saucepan, melt butter. Stir in flour and pepper. Add remaining chicken stock and cook over medium heat until mixture boils, stirring occasionally. Stir in spinach mixture. Cover and simmer about ten minutes. Add half-and-half and nutmeg. Heat through.
