Schmutzie's Rice and Beans

Ingredients

The finished product!
  • 1½ chopped onions
  • 2 cloves garlic (chopped or minced)
  • ¼ tsp red pepper flakes
  • 2 tbsp olive oil
  • 1 large can diced tomatoes, drained
  • 1 cup rice
  • 1-1½ cups of water
  • 2 tsp lime juice
  • ½ tsp salt
  • 1 regular-sized can black beans

Directions

Fry the onions, garlic, and red pepper flakes together in olive oil in a large saucepan for five to ten minutes, or until the onions are soft. Then, add drained diced tomatoes, long grain white rice, water, lime juice, and salt. Stir it all together, bring it to a boil, and then add drained black beans. Turn the heat down to medium low, cover it, and let it simmer for twenty minutes or until the water has been absorbed by the rice. Remove the saucepan from the heat and let it stand for ten minutes before serving.
