Fruity Chicken

Ingredients

  • 2 tbsp or more butter
  • ⅓ cup flour
  • 1½ tsp salt
  • ½ tsp paprika
  • ⅛ tsp pepper
  • 2½-3 lbs chicken (about 2 packages)
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp lemon juice
  • 1 tsp honey or brown sugar
  • 1⅓ cup (1 lb can) or more fruit cocktail, drained (reserve ½ cup juice)

Directions

Preheat oven to 375°. In 9x13" pan, melt butter. In plastic bag, combine flour, salt, paprika and pepper. Shake to mix, then throw chicken in a few pieces at a time to coat it. Arrange chicken in pan, making sure butter coats both sides. Combine juice, cinnamon, nutmeg, lemon juice and brown sugar and pour over the chicken. Bake for about 50 minutes, basting occasionally, then pour drained fruit cocktail over dish. Bake for an additional 15-20 minutes.
